Several days ago, one of my classmates came back from supermarket with a large bag of food. Because of having found a new style of tinned?ish in the food store, she was very glad. Several other roommates were invited to enjoy the “mouth?atering chicken”. Unfortunately, after finishing the food, all of my three friends had stomachaches and vomited, their faces having become paler and paler. Due to sensitivity to that kind of tinned food, I escaped that suffer. At that time, my mind went blank. I dialed the emergency number with my trembling hand, therefore they were quickly sent to hospital. The doctor said they were lucky to be out of danger because they did not eat too much of that rotten fish and were hospitalized on time.
This is the matter that happened around me which made me realize the seriousness of the food safety problem. I sincerely hope that the whole society could attach much importance to this issue.

There are several reasons which may account for this social phenomenon. First of all, there are a couple of economic driving forces behind this undesirable tide. The weak supervision and the lack of adequate punishment on those illegal producers is also a noticeable reason which enforces the trend. 一、目的
为保证食品安全，保障公众身体健康和生命安全，根据《中华人民共和国食品安全法》，结合公司实际，特制定本制度。
二、适用范围
（一）本制度适用于本公司食品生产经营的餐厅、水吧、外卖点及食堂的食品安全管理。
（二）任何部门和个人有权举报食品生产经营中的违法行为，对食品安全监督管理工作提出意见和建议。
三、职责
（一）本公司所有公园应当严格执行本制度和有关食品安全的法律、行政法规的规定，保证食品安全。
（二）公园的主要负责人全面负责本公园的食品安全管理。
（三）主要负责人、安全负责人、经营负责人、食品从业人员人员应认真履行本单位规定的相关职责，切实做好食品安全工作。
四、食品安全管理规定
（一）食品安全知识培训、宣传
1、公司食品从业人员、新入职员工包括实*生，必须在接受食品安全法律法规和食品安全知识培训，考核合格后方可上岗。
2、应当认真制订培训计划，定期组织管理人员、从业人员进行食品安全知识、职业道德和法律教育的培训以及食品加工操作技能培训。
3、公司食品从业人员包括负责人、食品安全管理人员和服务人员，对其的初次培训时间应分别不少于20、50、15课时。
4、建立从业人员食品安全知识培训档案，将培训时间、培训内容、考核结果记录归档，以备查验。
5、公司应当定期使用广播、壁报、标语、视频等形式开展经常性的食品安全知识宣传和普及教育。
（二）员工身体健康、卫生要求
1、公司食品从业人员须持有《健康证》且在有效期内方可从事食品生产经营活动。食品从业人员，新入职员工包括实*生每年必须进行健康检查，取得《健康证》后方可上岗，严禁先上岗后查体的情况发生。
2、公司负责组织食品从业人员的健康检查工作，建立其卫生档案，督促“五病”人员调理岗位，并对从业人健康状况进行日常监督管理。
3、凡是患有痢疾、伤寒、病毒性肝炎等消化道传染病（包括病原携带者），活动性肺结核，化脓性或者渗出性皮肤病及其他有碍食品卫生的疾病，不得从事接触直接入口食品的工作。
4、凡是餐饮从业人员手部有开放性、感染性伤口的，必须调离工作岗位。当观察到员工有以下症状时，应暂停接触直接入口食品的工作或采取特殊的防护措施：腹泻；手外伤、烫伤；皮肤湿疹、长疖子；咽喉疼痛；耳、眼、鼻溢液；发热；呕吐。
5、餐饮从业人员应当认真学*有关法律法规和食品安全指示，掌握本岗位的卫生纪律要求，养成良好的卫生*惯：勤洗手，勤洗澡、理发、剪指甲，勤洗衣服、被褥，勤换工作服。
6、操作前、处理食品原料后、从事与食品加工无关的其他活动后、上厕所后或接触直接入口食品之前都应洗手，先用消毒液消毒，后用流动水冲洗。
7、不得留长指甲、涂指甲油、戴戒指，不得在食品加工或者销售场所内吸烟、吃东西、随地吐痰，不得穿工作服入厕。
8、不得面对食品打喷嚏、咳嗽及其他有碍食品卫生的行为，不得用手抓取直接入口食品，用勺直接尝味，使用后的操作工具不得随处乱放。
9、要注意个人卫生形象，养成良好的卫生*惯，穿戴整洁的工作衣帽，头发梳理整齐置于帽后。进入备餐间必须更衣两次，按分餐要求洗手消毒、带口罩、带卫生手套、带工作帽。
（三）食品采购
1、采购食品时，要按照国家有关规定向供应商索取并仔细查验《营业执照》、《食品生产许可证》或者
《食品流通许可证》、标注通过有关质量认证食品的相关质量认证证书、进口食品的有效商检证明、国家规定应当经过检验检疫食品的检验检疫合格证明。注意查验证件有效期限，是否是伪造、涂改、借用的证件。
2、采购食品时，索取供货商出具的正式销售发票；或者按照国家相关规定索取有供货商盖章或者签名的销售凭证，并保留真实有效的地址和联系方式；销售凭证应当记明食品名称、规格、数量、单价、金额、销货日期等内容。
3、索取和查验的营业执照（身份证明）、生产许可证、流通许可证、质量认证证书、商检证明、检验检疫合格证明、质量检验合格报告和销售发票（凭证）应当按供货商名称或者食品种类整理建档备查，相关档案应当妥善保管，保管期限自该种食品购入之日起不少于2年。
4、禁止采购腐败变质、掺杂掺假、发霉生虫、有毒有害、质量不新鲜及无产地、无厂名、无生产日期和保质期或标志不清、超过保质期限的食品和原料；禁止采购无《食品卫生许可证》或《食品生产许可证》、《食品流通许可证》的食品和原料。
（四）食品存储管理
1、仓库负责人须对入库的食品做好验收工作，在食品台帐上详细登记供货单位、产品名称、数量、批次、保质期限和相关证件是否齐全，相关证件证明应当保存一年以上备查。不符合要求的不得入库。
2、食品安全管理人员定期查阅食品台账和检查食品的储存状况，对即将到保质期的食品，应当在食品台账中做出醒目标注，并优先出货；对超过保质期或者腐败、变质、质量不合格等不符合食品安全标准的食品，应当立即停止销售，撤下柜台报损。食品的处理情况应当在食品台账中如实记录。
3、建立仓库进出库专人验收登记制度，做到勤进勤出和先进先出，定期清仓检查，防止食品过期、变质霉变和生虫，及时清理不符合卫生要求的食品。
4、食品与非食品应分库存放，不得与洗化用品、日杂用品等混放。
5、食品应分类（即：食品原料、半成品、成品；植物性食品、动物性食品和水产品；生、熟食品等）分架、隔墙隔地（隔地30cm、隔墙10cm）存放，各类食品有明显标志，有异味或易吸潮的食品应密封保存或分库存放，易腐食品要及时冷藏、冷冻保存，散装食品应盛装在容器内并加盖密封并张贴标识。
6、食品仓库实行专用并设有防鼠、防蝇、防潮、防霉、通风的设施及措施，并运转正常。食品仓库应经常开窗通风，定期清扫，保持干燥整洁。
（五）食品设备设施、餐具管理
1、食品处理区应按照原料进入、原料处理、半成品加工、成品供应的流程合理布局设备、设施，防止在操作中产生交叉污染。
2、配备与经营的食品品种、数量相适应的消毒、更衣、盥洗、采光、照明、通风、防腐、防尘、防蝇、防鼠、防虫、洗涤以及处理废水、存放垃圾和废弃物的设备或设施，主要设施宜采用不锈钢，易于维修和清洁。
3、加工与用餐场所（所有出入口），设置纱门、纱窗、门帘或空气幕，如木门下端设金属防鼠板，排水沟、排气、排油烟出入口应有网眼孔径小于6mm的防鼠金属隔栅或网罩；距地面2m高度可设置灭蝇设施；有效消除老鼠、蟑螂、苍蝇及其他有害昆虫及其孳生条件。
4、食品处理区应采用机械排风、空调等设施，保持良好通风，及时排除潮湿和污浊空气。
5、用于加工、贮存食品的工用具、容器或包装材料和设备应当符合食品安全标准，无异味、耐腐蚀、不易发霉。
6、各功能区和食品原料、半成品、成品操作台、刀具、砧板等工用具，应分开定位存放使用，并有明显标识。
7、贮存、运输食品，应具有符合保证食品安全所需要求的设备、设施，配备专用车辆和密闭容器，远程运输食品须使用符合要求的'专用封闭式冷藏（保温）车。每次使用前应进行有效的清洗消毒，不得将食品与有毒、有害物品一同运输。
8、应当定期维护食品加工、贮存、陈列、消毒、保洁、保温、冷藏、冷冻等设备与设施，校验计量器具，及时清理清洗，必要时消毒，确保正常运转和使用。设立独立的餐饮具洗刷消毒室或专用区域，消毒间内配备消毒、洗刷保洁设备。
9、洗刷餐饮具的水池专用，不得在洗餐饮具池内清洗食品原料，不得在洗餐饮具池内冲洗其他物品和保洁用品。
10、收回的餐饮具、用具，须立即进行清洗消毒，不隔餐隔夜。
11、清洗餐饮具、用具的洗涤剂、消毒剂须符合国家有关卫生标准。餐具消毒前必须清洗干净。消毒后的餐饮具表面光洁、无油渍、无水渍、无异味、无泡沫、无不溶性附着物，及时放入保洁柜密闭保存备用。
12、盛放消毒餐具的保洁柜要有明显标记，要经常擦洗消毒，已消毒和未消毒的餐饮具要分开存放，不准放入私人物品，防止交叉污染。
13、洗刷消毒结束，须清理地面、水池卫生，及时清理泔水桶，做到地面、水池清洁卫生，无油渍残渍，泔水桶内外清洁。
（六）食品粗加工管理
14、分设肉类、水产类、蔬菜原料加工清洗区域池，并有明显标志。食品原料的加工和存放要在相应位置进行，不得混放和交叉使用。
15、加工肉类、水产类的操作台、用具和容器与蔬菜分开使用，并要有明显标志，盛装水产品的容器要专用。
16、各种使用原料不得随地堆放，清洗加工食品原料须先检查质量，发现有腐败变质、有毒有害或其他感官性状异常的，不得加工。择洗、切配、解冻、加工工艺流程必须合理，各工序必须严格按照操作规程和卫生要求进行操作，确保食品不受污染。
17、蔬菜类食品原料要按“一择、二洗、三切”的顺序操作，彻底浸泡清洗干净，做到无泥沙、杂草、烂叶。肉类、水产品类食品原料的加工要在专用加工洗涤区域池内进行。肉类清洗后无血、毛、污，鱼类清洗后无鳞、鳃、内脏，活禽宰杀放血完全，去净羽毛、内脏。
18、做到刀无锈、砧板不霉，整齐有序，保持室内清洁卫生。加工结束后及时清理地面、水池、加工台，及时清除垃圾，垃圾桶每日清洗，保持内外清洁卫生。
（七）烹调加工管理
1、烹调加工前须认真检查食品原料的质量，不得烧煮腐败变质、有毒有害的食品。
2、烹制加工的食品要烧熟煮透，其中心温度不低于70℃，油炸食品要防止外焦里生，加工后直接入口的熟食要盛在已消过毒的容器或餐具内，不得使用未经消毒的餐具和容器。
3、烹调后至食用前需要较长时间（超过2小时）存放的食品应当在高于60℃，或低于10℃的条件下存放，需要冷藏的熟制品应在放凉后再冷藏。
4、隔餐隔夜熟制品必须经充分加热后方可食用。
5、烹制加工时不得用勺子品味。
6、菜刀、砧板、盆、抹布、盆用后清洗消毒；食品容器不落地存放；灶台、抹布应当随时清洗，保持清洁，不要用抹布擦拭碗盘，滴在盘边的汤汁用消毒抹布擦拭。
7、应严格按照《食品生产经营单位废弃食用油脂管理规定》要求，搜集处理废弃油脂，及时清洗抽油烟机罩。
8、剩余食品及原料按熟食、半成品、生食的卫生要求存放，不可混放和交叉叠放。
9、工作结束后，调料加盖，工具、用具要洗刷干净、定位存放；灶上下、地面要清洗冲刷干净，不留残渣油污，不留卫生死角，及时消除垃圾。
（八）面食制作管理
1、加工前要对待加工使用的食品原料质量感官检查，发现生虫、霉变、有异味、污秽不洁等不符合食品安全要求的情况，不能加工。
2、做馅用的肉、蛋、水产品、蔬菜等原料要按照粗加工食品安全制度的要求加工。蔬菜要彻底浸泡清洗；易造成农药残留的蔬菜应该浸泡30分钟以上，冲洗干净后再加工制作。
3、各种工具、用具、容器生熟分开使用，定位存放。各种熟食面点改刀要在专用的熟食板上进行，不得在面案上直接改刀。
4、当餐未用完的面食，应当妥善保存，糕点存放在专用柜内，含水分较多的带馅糕点，要冷藏，注意生熟分开保存。
5、各种食品加工用具、设备如：面板、面案、容器、绞肉机、馒头机、豆浆机、和面机、面条机等，用后及时清洗干净，定期消毒。各种用品如盖布、笼布、抹布等要洗净、晾晒备用。
6、加工结束后及时清理面点加工场所，做到地面无污物、残渣，用具、设备清洁，各种容器、用具、刀具等清洗干净后定位存放。
（九）裱花制作管理
1、裱花应在专间内由专人加工制作，其他人不得随意进出，个人生活用品及杂物不得带入裱花间。
（一）进货与供货商档案相对应制度
1、执行食品业户“一户多档“制度。将重要食品的生产厂家营业执照、食品质量合格证明、检验检疫证明和每次进货食品的名称、来源、数量、时间、批次及主要去向等及时登记建档备案，做到“一户一档”、项目清楚、手续完备、材料规范，妥善保存。
2、执行索证索票和进（销）货台帐制度。经营者购进食品时须向生产厂家和供货商索取票证。证明供货企业和生产加工企业的主体资格合法性的证件（包括营业执照、生产许可证、经营许可证、商标注册证等）。证明食品质量符合相关标准或者规定的证明（包括食品质量合格证、质量认证证明等）。证明食品来源的票据、证明，如税务发票、收据、商品信誉卡、出货单据、购销合同等。依据发票或收据等记入食品进（销）货台帐。以上材料规范存入“一户多档“档案内。
索证索票和进（销）货台帐应当真实，保存期限不得少于二年。
（二）食品进货查验记录制度
1、执行食品质量进货查验登记制度。在进货时，索取并认真检验供货商的营业执照、许可证、食品质量合格证、检验检疫证明、销售发票等经营性证明文件。
2、经营者查验食品质量、核对食品标识的主要内容：中文标明的食品名称、生产厂名和厂址；商标、品牌、生产批号、产品标准号、定量包装食品的净含量及其标准方式；
3、根据食品的特点和使用要求，需要表明规格、等级、所含主要成份的名称和含量；
4、限期食用的食品，是否在显着位置清晰标明生产日期和保质期或者失效日期。
5、对使用不当、容易造成食品损坏可能危及人身、财产安全的商品进行警示标志或中文警示语。
6、如实记录食品的名称、规格、数量、生产批号、保质期、供或者名称及联系方式、进货日期等内容。
食品进货查验记录应当真实，保存期限不得少于二年。
（三）从业人员健康制度
1、食品经营者应当建立并执行从业人员健康管理制度。
2、食品经营者应当对了解和掌握从业人员健康状况，并对从业人员健康状况进行日常监督管理。
3、食品从业人员每年应当进行健康检查，取得健康证明后方可从事食品经营工作。
4、患有痢疾、伤寒、病毒性肝炎等消化道传染病的人员，以及患有活动性肺结核、化脓性或者渗出性皮肤病等有碍食品安全的疾病的人员，不得从事接触直接入口食品的工作。
（四）食品储存运输制度
1、食品经营者应当按照保证食品安全的要求贮存食品，定期检查库存食品，储藏食品应隔墙离地20公分，存放食品的仓库通风良好，门窗、地面、货架清洁整齐，库内无老鼠、蟑螂及其他昆虫，不存放过期、变质食品；不得存放私人物品；不存放有毒有害物品及其他杂物。食品储存过程中采取保质措施，做好质量检查工作，及时处理有变质征兆的食品。
2、食品经营者贮存散装食品，应当在贮存位置标明食品的名称、生产日期、保质期、生产者名称及联系方式等内容。
3、储存、运输和装卸食品的容器、工具和设备应当安全、无害，保持清洁，防止食品污染，并符合保证食品安全所需的温度等特殊要求，不得将食品与有毒有害物品一同运输。装卸食品不得接触地面，装车后除能加锁的运输车辆外，人不离车，运输食品的车辆必须有防尘、防蝇、防晒、防雨设施。
（五）不合格食品退市制度
1、执行质量承诺和不合格食品退市制度。食品经营者对经营的食品向消费者作出质量承诺。
2、对经检查、检测发现的有质量问题的食品，采取拒绝上市、撤下柜台、强制退市、追溯召回等措施，防止有质量问题的食品上市。对库存食品进行清理查验，自觉抵制不合格食品。发现有可能或已确认为不合格的食品，主动采取中止进货、停止销售、召回、退货、就地封存等适当措施，并将退市食品、退市情况报管辖地工商所处理和备案；
3、接到不合格食品退市通知后，立即将不合格食品下架、退市，集中处置，并做好退市记录和处置记录；同时将退市情况报告辖区工商所；对已出售的不合格食品，立即报告辖区工商所，并在新闻媒体或者在经营场所入口处等显着位置设置醒目告示，告知召回食品的名称、品种、规格、批号、上市时间等内容。
4、凡上市的散（裸）装食品必须有防蝇防尘设施。确保经营食品质量安全。食品经营者发现其经营的食品不符合食品安全标准，应当立即停止经营，通知相关生产经营者和消费者，并记录停止经营和通知情况。
5、可能造成安全卫生危害的，立即向当地工商行政管理部门或相关行政管理部门报告。
6、经营者进货时应当与经销商或生产商签订合同，在合同中订立供货方食品质量保证及对不合格食品的召回、退货赔偿条款。
为保证食品安全，履行“食品安全第一责任人义务”，特制定以下制度和措施：
一、配备与经营相适应，并能确保食品安全的经营设备或设施。
写清楚经营范围、经营方式以及配备的经营设备或设施。
确保配备的经营设备或设施符合下列要求：
1、具有与经营的食品品种、数量相适应的消毒、更衣、盥洗、采光、照明、通风、防腐、防尘、防鼠、防虫、洗涤及处理废水、存放垃圾和废弃物的设备或设施。
2、设备空间布局和操作流程合理，符合食品安全要求。
3、运输、装卸、陈列和贮存食品的容器、工具和设备应安全、无害，并保持清洁，符合保证食品安全所需的温度等特殊要求。食品应与有害物品分开运输、存放。
4、销售散装食品应当使用无毒、清洁的包装材料；同时设置标牌，标明食品的名称、配料、生产日期、保质期等；销售人员应当穿着隔离衣，并使用无毒、清洁的售货工具。
二、配备与经营相适应，并符合下列要求的经营场所和仓储场所。
经营场所所在位置适合从事食品经营，与有毒、有害场所（物品）及其他污染源保持安全距离；
经营场所与生活场所分开或隔断，并保持卫生整洁；
三、明确食品安全管理操作流程
我单位从事xx经营，整个经营过程分？个环节。分别是：（例子）食品采购、食品储存、食品运输、食品销售、不合格食品退市。
（一）食品采购（责任人：）
1、制定食品采购计划。确定采购食品的品种、品牌、数量等相关计划安排。
2、选择供货商。要认真查验供货商的主体资格证明，保证食品的来源合法。
3、签订供货合同。与供货商签订供货合同，明确双方的权利义务关系，特别是出现食品质量问题时的双方的责任和义务。
4、索取食品的相关资料。向供货商索取食品的生产许可证、QS认证证书、商标证明、进货发票等证明材料，采用扫描、拍照、数据交换、电子表格等科技手段建立供货商档案备查，按照**食品监管要求，将相应资料录入“食品进销货台帐”系统并将资料上传**食品安全电子监管系统。
5、对食品进行查验。具备条件时设立食品检测室，对供货商提供的食品进行检测并做好详细记录。经查验不合格的食品，通知供货商做退货处理。
6、每一批次的进货情况详细记录进货台帐，账目保管期限为二年。
7、按照**食品监管要求，将每一批次的进货资料录入“食品进销货台帐”系统并将资料上传**食品安全电子监管系统。
（二）食品储存（责任人：）
1、设立食品储存仓库。专门用于存放查验合格的食品。
2、详细记录食品入库信息。食品入库要详细记录商品的名称、商标、生产商、进货日期、生产日期、保质期、进货数量、供货商名称、联系电话等信息。
3、按照食品储藏的要求进行存放。食品要离墙离地，按入库的先后次序生产日期、分类、分架、生熟分开、摆放整齐、挂牌存放。严禁存放变质、有臭味、污染不洁或超过保质期的食品。
4、贮存直接入口的散装食品，应当采用密闭容器。在贮存位置标明食品的名称、生产日期、保质期、生产者名称及联系方式等内容。
5、食品出库要详细记录商品流向。批发销售的情况应建立销售台帐，详细记录购买方的信息，以备查验，账目保管期限为二年。
6、每天对库存食品进行查验。发现食品有腐烂变质，超过保质期等情况，要立即进行清理。
7、每周对仓库卫生检查一次。确保库房通风良好、干净整洁，符合食品储存要求。
8、变质食品设立专门的仓库或容器进行保管。不得同合格的食品混放在一起，以免造成污染。
（三）食品运输（责任人：）
1、运输食品时运输工具和容器要清洁卫生，并生熟分开，运输中要防蝇、防尘、防食品污染。
2、在装卸所采购的食品时要讲究卫生，不得将食品直接与地面接触。
3、直接入口的散装食品，应当采用密闭容器装运。不要把直接入口的食品堆放在地面或与需要加工的食品原料和加工半成品混放在一起，防止直接入口的食品受到污染。
（四）食品销售（责任人：）
1、每天对上架销售的食品进行查验。销售人员要按照食品标签标示的警示标志、警示说明或者注意事项的要求，销售预包装食品，确保食品质量合格，食用安全。
2、对即将到达保质期的食品要集中摆放，并作出明确标示。
3、用于食品销售的容器、销售工具必须符合卫生要求。
4、销售散装食品，应当在散装食品的容器、外包装上标明食品的名称、生产日期、保质期、生产经营者名称及联系方式等内容。
5、销售散装、裸装食品必须有防蝇防尘设施，防止食品被二次污染。
6、批发销售的情况应建立销售台帐备查，相应资料应当及时录入“食品进销货台帐”系统并将资料上传**食品安全电子监管系统。账目保管期限为二年。
（五）不合格食品退市（责任人：）
1、食品安全管理人员在食品经营中发现经营的食品不符合食品安全标准，或接到执法部门、生产企业的召回通知，应当立即停止经营，下架封存，做好登记，并及时通知**监管部门。
2、通知相关生产经营者或供货商，并记录停止经营和通知情况。
3、在经营场所向消费者公示召回食品的名称、批号等信息，并安排专人处理消费者退货事宜。
4、被召回的食品，食品安全管理人员应当进行无害化处理并予以封存，做好记录，严禁再次流入市场。
5、召回及封存食品的情况要及时通知供货商及**监管部门。
6、不合格食品的处置。与供货商有合同约定的，按照约定执行。**监管部门有明确要求的，按照**部门的通知要求进行处置。
7、**部门明令召回的不合格食品，其召回和销毁处理流程依照《食品安全法》等法律法规的规定及**监管部门的通知要求执行。
8、不合格食品退换货、下架封存、召回等处置资料，要建立专门的档案进行保管，以备查验。
四、明确食品安全管理人员
我单位由张xx、李xx、赵xx等？个人负责食品安全管理工作。
张xx负责食品采购环节和食品储存环节的食品安全管理工作；其具体职责是：
李xx负责食品运输环节的食品安全管理工作；其具体职责是：
赵xx负责食品销售、不合格食品退市环节的食品安全管理工作；其具体职责是：
1、炊事人员应每年进行健康检查，经过卫生知识培训，取得健康合格证明和卫生知识培训合格证明后方可上岗，工作时穿戴整齐的工作衣帽，保持良好的个人卫生。
2、食堂工作人员进行食品加工时应遵守相应岗位的卫生操作规程，有良好的卫生*惯。
3、保持食堂和餐厅的环境卫生整洁，每天进行卫生清扫，及时清运餐厨垃圾。
4、食品加工按照工序流程规范进行，各功能专间专用，不得交叉；生熟食品容器及工具标识清楚，不得混用。
5、及时修缮维护卫生基础设施，保证清洗、消毒和防尘、防蝇、防鼠设施的正常使用。
6、建立健全卫生管理档案，做好各类台账记录，并妥善保存二年。
7、食品采购渠道合法，验收认真，索证索票；食品和食品原料设专间储存，分类分架，隔墙离地。
8、规范进行餐（饮）具消毒，消毒岗位从业人员熟悉消毒知识，按规范开展餐（饮）具消毒和保洁，并做好台账记录。
9、食品添加剂使用实行专人专柜管理，严格按照国家标准规定的使用范围和使用量使用，并进行公示。
10、严格执行食品留样制度。要求生、熟食品，各100克，48小时，专人负责，锁存留样。
一、为保障人民群众身体健康和生命安全，加强对食品经营食品质量监督管理，保护消费者的合法权益，依据《中华人民共和国食品卫生法》、《中华人民共和国产品质量法》、《中华人民共和国消费者权益保护法》等法律法规规定，制定本制度。
二、食品经营者必须遵守本制度。
三、列入进货查验的食品，是指消费者经常食用的食品，包括肉、禽、畜，粮食及其制品，蔬菜、水果，奶制品， 豆制品，饮料和酒类等食品。
四、经营者购进食品时，应查验证明供货方主体资格合法的有效证件，并按批次向供货方索取证明食品质量符合标准或规定以及证明食品来源的票证，并保存原件或者复印件。
需要查验和索取的具体票证，由《食品索证索票制度》作出规定。
五、 经营包装食品的，要对食品包装标识进行查验核对，内容包括：
(一)中文标明的商品名称，生产厂名和厂址;
(二)商标、性能、用途、生产批号、产品标准号、定量包装。
(三)根据商品的特点和使用要求。需要标明的规格、等级、所含主要成分和含量;
(四)限期使用商品的生产日期、安全使用期(保质期、保存期)和失效日期;
(五)对使用不当、容易造成商品损坏可能危及人身、财产安全的食品的警示标志或中文警示语。
六、食品经营者经营的农产品及其他散装食品，法律法规规定必须检验或者检疫的，经营者必须查验其有效检验检疫证明，未经检验检疫的，不得上市销售。法律法规没有明确规定的，应经有关产品质量检测机构检测合格才能上市销售。
七、经营者应经常检查食品的外观质量，对包装不严实或不符合卫生要求的，应及时予以处理，对过期、腐烂变质的食品，应立即停止销售，并进行无害化处理。
八、经营者按照食品广告指引购进食品时，要注意查验是否有虚假和误导宣传的内容。
九、市场开办者应配备相应的检测设施，对在市场内销售的食品进行自检，经检测合格才能上市销售，并登记检测结果存档备查。
十、市场开办者要指导经营者做好食品进货查验工作，检查督促经营者进货查验工作的落实，对经营者索取的重要食品的相关票证，应统一保管，集中备案，随时接受工商部门的检查。
十一、经营者在进货时，对查验不合格和无合法来源的食品，应拒绝进货。发现有假冒伪劣食品时，应及时报告当地工商行政管理机关。
